Ingredients (for 10 muffins):
- 2 medium apples (between 200 and 250g without stems)
- 250g whole grain flour
- 2 tsp baking powder
- 80g cane sugar or brown sugar (I used less sugar than in the other recipe, because apples are already sweet)
- 2 eggs
- 80ml vegetable oil
- 1 cup sour cream or greek yoghurt (as I didn't have any sour cream on hand)
- 1 tsp of cinnamon
First of all, we need to chop or grate these apples a bit. I used my food processor after removing the stems, but chopping them with a knife or grating them would also be an option if you don't have one.
Add all of the other ingredients....
....and start mixing! Either with a hand mixer or with a wooden spoon.
All you need to do now is put them into muffin cups on the griddle and put them in the oven at 180°C for about 25-30 minutes or until an inserted toothpick comes out clear.
