Whole Grain Apple-Cinnamon Muffins

You might already be familiar with my Rhubarb-Muffins, which are adapted from my favourite, quickest and most simple muffin recipe by Donna Hay. Since it's autumn now, and rhubarb is not in season anymore, I thought of how I could change this recipe a little. And what's one of the most popular fruits in autumn? Correct! APPLES :) So this is my adjusted recipe, I hope you like it as much as me and my friends did!

 Ingredients (for 10 muffins):

  • 2 medium apples (between 200 and 250g without stems)
  • 250g whole grain flour
  • 2 tsp baking powder
  • 80g cane sugar or brown sugar (I used less sugar than in the other recipe, because apples are already sweet)
  • 2 eggs
  • 80ml vegetable oil
  • 1 cup sour cream or greek yoghurt (as I didn't have any sour cream on hand)
  • 1 tsp of cinnamon

First of all, we need to chop or grate these apples a bit. I used my food processor after removing the stems, but chopping them with a knife or grating them would also be an option if you don't have one.

Add all of the other ingredients....

 ....and start mixing! Either with a hand mixer or with a wooden spoon.  



All you need to do now is put them into muffin cups on the griddle and put them in the oven at 180°C for about 25-30 minutes or until an inserted toothpick comes out clear.
